Pick a hotel way away from the main town. Preferably one with great food reviews. Pay for a villa on the beach. Eat lots of great Vietnamese food and drink lots of cocktails. I chose Peppercorn Beach Resort. Don't expect perfect or polished, but be happy with friendly and charming (and the best margarita).
Don't spend too much time in town - I went once to go to All Good Things, a purveyor of handmade local products.
Do go to Phu Quoc countryside farm tour. Don't expect professional, but it's still a fun way to break up beach time.
