Phu Quoc - what I did and how I did it
Pick a hotel way away from the main town. Preferably one with great food reviews. Pay for a villa on the beach. Eat lots of great Vietnamese food and drink lots of cocktails. I chose Peppercorn Beach Resort. Don't expect perfect or polished, but be happy with friendly and charming (and the best margarita).
Don't spend too much time in town - I went once to go to All Good Things, a purveyor of handmade local products.
Do go to Phu Quoc countryside farm tour. Don't expect professional, but it's still a fun way to break up beach time.

I can't remember the details of this meal now that a few months has passed, except that it was the best.
The room was divine. I sat around a beautiful shared table facing the kitchen - everything about it was pure Scandinavian restraint. The service was excellent, the wine list was interesting and the food was sublime. The chef was in the house, and unbeknownst to me, is quite the celebrity.
Such a visually beautiful but also well balanced menu. If I ever go back to Stockholm this is the first place I'll be booking for dinner.
